Swedish Herring

Shopping list

500 g pickled herring
4 shallots
1/4 l water
1 tsp. black tea leaves
1/8 l Quince Vinegar
2 bay leaves
10 juniper berries
5 piment seeds
5 black pepper corns
5 cloves
2 tbsp. Antara Olive Oil

Instructions

500 g pickled herring soak in plenty of water for 24 hours. Next remove the heads, the fins and the intestines from the fish and cut the fillets into pieces of 4 cm.
4 shallots peel and cut into thin rings.
1/4 l water bring to a boil and pour it over 1 tsp. black tea leaves Let the tea steep for 5 minutes. Remove the tea leaves and let the tea cool down.
1/8 l Quince Vinegar add to the tea together with
2 bay leaves
10 juniper berries
5 piment seeds
5 black pepper corns and 5 cloves
Put the herring into a container with a lid together with the onion rings and cover everything with the liquid. Finally pour 2 tbsp. Antara Olive Oil on top of it and leave the herring to marinate for at least 24 hours.
