Crunchy Farmer Salad with grapefruit, freh dates and roasted chicken liver

Shopping list

2 handfull white cabbage
2handvoll red cabbage

Marinade:
1 pink grapefruit
a pinch sugar
a dash Honey Vinegar
4cl Walnut Oil
1 grapefruit, cut in fillets
8 fresh dates, cored and cut into strips

SpiceMix:
50% coriander seeds
50% 1 pepper corns small chili.

2 slices bacon
4 pieces chicken liver
toasted white bread croutons
1 pinch salt

Instructions

2 handfull white cabbage and 2 handvoll red cabbage chop fineley and lay in salted water (to make the cabbage even more crisp).
Marinade:
1 pink grapefruit squeeze and mix well with a pinch sugar, a dash Honey Vinegar and 4cl Walnut Oil.
Toroughly strain the white and the red cabbage, marinate and layer the cabbage leaves in a round cookie ring. Stack 1 grapefruit, cut in fillets, as well as 8 fresh dates, cored and cut into strips between the cabbage layers.
SpiceMix:
50% coriander seeds crush in a mortar together with 50% pepper corns and 1 small chili.
2 slices bacon fry together with 4 pieces chicken liver and toasted white bread croutons.
Season with the Spice Mix and place on top of the cabbage tower when still warm.
