Light Summer-Soup with Tomatoes and Apricots

Shopping list

1 white onion
3 Tbsp. Apricotseed Oil
6 ripe tomatoes
12 apricots
salt
sugar
3/4 Liter vegetable soup
1 twig of lavender
Apricotseed Oil

 

Instructions

1 white onion chop and sweat in 3 Tbsp. Apricotseed Oil.
Add 6 ripe tomatoes and 12 apricots cut into small cubes. Season with salt and sugar and infuse with 3/4 Liter vegetable soup.
After adding 1 twig of lavender let the soup simmer for 20 Minutes.
Remove the lavender and finish with milk foam and a few drops of Apricotseed Oil.
