Sours are brewed together.
The origin of commercial vinegar production were vinegar breweries,
which were mentioned by name in 1777 as "Essigbrauereyen"
for the first time.
Brewing vinegar has also then been its own profession which
- as mentioned in the old writings - was kept very secrect.
As the production of vinegar is still mystified very much,
many vinegar producers keep their experiences secret. To us
